Entering Les Cols means stepping into a visual poem created by the prestigious RCR Arquitectes studio (Pritzker Prize). The project, born in 1990 in the former stables of the family home, is now a global benchmark for emotional architecture.

Golden metal spaces and purist lines coexist with the farmhouse’s centuries-old structure, creating an atmosphere of mysticism and austerity. Here, luxury does not lie in ostentation but in the connection with the surroundings: from the dining room that seems to float over the garden to the R&D space at Casa Horitzó. It is a setting where every detail invites contemplation, turning the act of dining into a ritual of returning to the earth.

The strength of three generations of women

While Fina Puigdevall is the soul and vision, her three daughters are the vibrant present and future. Martina Puigvert, awarded Michelin Young Chef 2024, leads the kitchen with a sensitivity that elevates humble products like buckwheat, fresh eggs, or onions to the status of gastronomic jewels. Beside her, Clara Puigvert brings excellence to service and sommelierie, while Carlota completes the circle in the pastry section. 

This family alliance, supported by Manel Puigvert, has consolidated an “un-traveled product” philosophy that rejects any ingredient not sourced from their own garden or local producers.

The gastronomic offering at Les Cols is defined by a generous sobriety.

Its tasting menu (€175) is a refined sequence that conveys sincerity in every bite. Iconic dishes such as the onion royalewith Olot tortell or the fresh egg of the day with Garrotxa truffle are testaments to a cuisine that knows how to make the most of the volcanic landscape. The journey dives into the essentiality of Vall d’en Bas potatoes, Santa Pau beans, or farmhouse poultry, offering an experience that feeds both body and spirit.
